BAGGLE LESSON BY CHISUKO NAKANO - YWAKUNI - YAMAGUSHI KEN - JAPAN
On a recent trip to Japan, my darling friend & Italian Chef, Tatsuya Zama introduced me to Chisuko Nakano, the charming Bagel goddess of Iwakuni, Yamagushi ken.
Tatsuya and Chisuko met at one of the very many local food market, Tatsuya was puzzled by how fast Chisuko was selling her supply of bread and bagels to a crowd of obvious connoisseurs and returning customers.
The two met after the event and decided to collaborate: Chisuko will bake the bagels and Tatsuya will turn them into amazing lunch/sandwiches for the savvy EAT-UMI customers.
Chisuko moved with Navy husband to Yamagushi province a few years ago and while settling there, having her children, she also started looking around for something great to make from the local supply of her adoptive South-East province.
She learned bread making but its her bagels who brought her fame - Made from Hokkaido organic wheat, Iwakuni spring water and home made yeast prepared with Hiroshima organic plum and apple, the delicious bagels are available only 3 times a week from Chisuko's kitchen in Iwakuni.
