NORIKO SHIRATORI, A HIDDEN CHEF ON OSHIMA ISLAND - JAPAN
On Oshima island, the economic boom came with the mandarin-orange called "Ōshima mikan". But the urban exodus of the 1990's and life style change with the young generation moving away to cities has brought back Oshima to its natural self.
A young beekeeper I met on the island reported an other problem from the intensive agricultural practices of the past decades: Bamboo - a parasite overgrowing the endemic spices such as cherry, quince and loquat (neflier) across the island, with much less flower and nectar for gathering bees and an imbalance in the overall ecosystem.
Noriko who was born on Oshima island and operate a small guest house and kitchen - booking required - at the top of the mountain overlooking the sea and forest.
She express her talent, using local ingredients found right at her door step: vegetable, venison & fishes.
The boars and piglets that regularly sack her garden and the orange growing wildly around her home gave her the first ingredients to carved her reputation for imaginative mind and cooking creativity.
